We have a walnut top for our kitchen island and we love it. It's a lovely, warm look.

We found the guy we bought from on-line (there are tons of them if you Google "wood countertops"). I can't find his URL right now, but have can get it at home later if you're interested. This particular guy is in CT, but close enough to deliver. I was able to see a sample of his product before buying when he delivered a similar countertop in north Jersey.

I think the other place we looked was Morristown lumber, so you can check out what they have.

We like the patina that develops over time with the wood. Ours is not sealed and therefore not meant to be a food prep area, but you can get wood countertops that are sealed for this purpose. We just use lemon oil, and it can be scratched if we're careless.

Ours are mahogany sealed with polymerized tung oil.

We love, love, love them. A carpenter built them for us and we designed the plank lay-out, edge detail, and the trim detail at the wall.

I am not germ phobic and I feel strongly that the marine quality finish repels all the germs I am worried about.

(BTW: Wood counters look great with cork floors.)

I had a custom cherry, end grain island top created by Grothouse Lumber in Pennsylvania. Not to far past Allentown (about 2 hours from MW/SO). They did an amazing job. Not cheap, but very high quality.
