My daughter needs a piece of iron to use for a science project. Is black iron pure iron (not steel) and does it rust if submerged?

It will rust. Black iron pipe is, I believe, made of steel. The fittings, on the other hand, are sometimes made of cast iron. In any case, steel or iron, it all rusts.

I suppose you could go to a plumbing supply house and ask for a cast iron elbow connection. The larger sizes (e.g. 2" pipe)are, I believe, cast iron.

Cast iron is actually less "pure" than steel, having more carbon in it, often by a lot. Stainless steel is made with lots of chromium, and it doesn't rust easily, hence the name.
