Most sealants say that you need the pressure treated lumber to be 'weathered' a bit before you apply... I believe there's something out there that can be applied to 'new' pressure treated lumber - does anyone know what it is?

You should check with the pressure treating company. They may not all be the same.
You might be able to apply a water repellant immediately though.
From wolmanizedwood.com:

"Most water repellent brands say that it is okay to apply a water repellent without delay, which is ideal timing. For other brands, a slight delay is recommended. Again, it is best to follow the manufacturer's instructions."
