More questions... We're going to partly light our in-progress kitchen (gutted ceiling-sheetrock to follow) with recessed lights (probably 4 units). They'll be mainly in front of countertops & fridge, separate ambient light over table, whole kitchen is 15' x 12'. What kind of wattage capacity would be good for cans/pendant? We'd like to have 'em on dimmers. Overkill to have 3 separate switches-2 for cans, one for over table? Any other good tips? re glare, etc...

You need to have cans every 3 - 4 feet (linearly) at about 24" from the wall (so at edge of the counters) to eliminate shadows. If you have 8 foot ceilings, a 50 watt bulb, wide beam, will both light your cabinet fronts and the counters nicely.

Absolutely switch each type of lighting indendently -- not only to give you better control but to save energy!

My understanding is that recessed cans are for general lighting and for task-specific lighting you want under-cabinet lighting etc. To save energy, you can get dimmable CFL retrofits for incandescent cans.
