Jeweler to reset a diamond

I 've heard countless stories - even some about a local jeweler - where they reset your ring and replace your stone with a lesser stone. Can anyone recommend, and I mean solidly recommend, a jeweler in the general area - NYC okay too - who would be trustworthy with this project? Incidentally, it's not like it is the Hope Diamond - but it has sentimental value. In the past two years 5 people I know (Including me) have bought Engagement rings there. They have all been great and at very good prices. Two of the less trusting girls had the rings appraised in NY and found that the rings were worth much more then the guys had paid, He’s great to work with and doesn’t pressure you at all. We bought our wedding rings there, and in the process Bridezilla pointed out a few tennis bracelets as “Suggested” wedding gifts. When I went in a week later to get her some earrings for her birthday he steered me toward the less expensive set, because they matched the bracelets.
