Awhile back I got the answer to this question, but neglected to print it out! A search of the attic wasn't successful or I didn't do it right.

I have an Imac and can't clean up and organize my favorities. How do I delete them?

I have an Emac— if you go under "FAvorites", it says "organize favorites": to delete just press delete and I think you can organize them by manually dragging them where you want to. Not sure if you're running the same system, but this should work for you.

I'll guess that you are running OS 9.2.2 or below, in that case go to your system folder, open the "Preferences" folder and then locate the preferences for "Favorites", trash them.
Close the Preferences folder and then locate and open your "Favorites" folder, remove or add aliases to whatever you wish, I used aliases for my drives and frequently used apps, that way everything is accessed by selecting which drive I need.
If you would like one or more aliases to be above the others than put one or more spaces in front of the name.
close your open folders and then empty your trash, and restart your iMac, check your "Favorites" menu under the Apple Menu.
If you wish to add a shortcut to a folder or an app directly to the Apple Menu, then open the "Apple Menu Items" folder in your "System" folder and add aliases as needed, a restart may be needed to see them in the menu.

I think I'll just keep a very untidy favorities list, or stop adding favorities.

Or, buy a new Mac!

It only takes a minute...
Most likely all you would have to do is to trash the Favorites preference file, and then restart, after the restart everything should be back in order.
