For my work, I sometimes interview people over the phone, then have the conversations transcribed.

I used to use an answering machine with a 2-way record function, which used microcassettes.

I'd like to figure out a way to record to my computer, into a sound file format that I could then email to a transcriptionist.

Can anyone tell me what type of hardware & software I might need for this?

Much appreciated. BTW, I'm working in PC, not Mac.
