I have always wanted to ask this: I just LOVE LOVE LOVE salads when I go out to most restaurants. Seems like the romaine lettuce in the caesar salad's is just perfect - cold and crisp. Maybe it's im my head but I never seem to be able to make it the same way. What's the secret to good romaine salad's?

cut the lettuce and put it in a bowl of ice cold water for 10 min

Dry the lettuce REALLY well after it's been in the ice water. I usually lay all the pieces on paper towels and pat them dry.

You have to discard all but the crispy inner part of the romaine (meaning discard the limpy shangha outer leaves). Make the dressing of your choice.

After you wash, you must spin the lettuce in a salad spinner. Water is great for cleaning, but is a lettuce's worst enemy
