This might not be exactly what you are looking for since I never had it on a skewer. I prefer the taste of the lamb over rice instead of the chicken over rice. The chicken always seems dried out whenever I try it. I think that the halal carts usually use chopped gyro cones for the lamb. The real deal is called shwarma which is not what you usually get from a cart. I don't know what the secret spices are. You can usually get two types of rice, basmati, which is flavored with cinnamon and who knows what else - or the yellow stuff which is more than likely flavored with saffron. Many times, they will use a little garlic infused oil, with a hint of lemon when they are warming the pre-cooked meat. The "white sauce", I think is tahini yogurt The "hot or red sauce" is a vinegar based chilli sauce This cart in the city has a website and a large following: http://www.53rdand6th.com/index.html
