I'm hosting a 40th birthday dinner party for my friend and she LOVES any kind of pasta with cream sauce. I've been looking at cook books and online, but nothing is jumping out so I thought I'd see if anybody here has a recicpe they really like. It will be about 12 people and I'll be doing the cooking myself, so simple is helpful. Thanks for any suggestions!

All "amounts" of the following are to be to your taste.. It is great! (easy too)

Any kind of pasta you like, although I tend to stick to penne, or tagliatelle (spinach and egg)
Butter
Onion
Mushroom
Sweetcorn
Peas
Diced ham
Double cream, or light if you prefer!!!
Tomato paste
Salt etc to taste

Cook pasta as normal.

Melt some butter in a pan, and add diced onion, how finely you chop/dice is up to you... Saute.
Add sliced mushrooms and cook through. Add sweetcorn, peas and ham, cook until warm. Add cream, and mix into the ingredients, then add it the tomato paste and mix through. Through all of this it is entirely up to you how much of anything you put in. I don't find it necessary to add any salt, but you might.

Drain pasta, and put into the cream sauce and combine.

Serve with salad and crusty bread.

I love sweet potato gnocchi with a butter sage sauce. I don't know if that counts as a cream sauce per se but it's darn good and dead simple.

Here's an easy one that Rich makes...Buy rottiserie chicken at Costco ($4.99)
Cut into bite size pieces. Cook up an onion, add chicken stock, and fat free half and half. Cook down to about half the liquid. Add the chicken. Mix in with Farfale (Bows) and some old bay seasoning.

Sautee shallots
Add minced garlic cook till almost tan color
add julienned proscuitto cook about 1 minute
add sweet vermouth cook till almost dry
add heavy cream, stir and cook till reduced to about 3/4
spoon over pasta, parpadelle is perfect

An authentic rich alfredo sauce is the most delicious thing ever using just fresh reggiano cheese and cream. MMmmm

Bolognese if you like meat; vodka sauce if you don't. Shrimp and scallops go well with Vodka sauce.

nothing is better than an alfredo sauce with fresh dill and lemon zest sprinkled on top with a grilled salmon filet. I just made it with spinach fetuccini and it was outrageous. The secret to a good cream sauce for a party is to do it before your guests arrive and put it in a coffee thermos. The heat is maintained without adding xtra heat so it wont seperate. This gives you more time to enjoy your guests.
