I need as many recipes for DIFFERENT ways to prepare and serve gound beef or turkey as I can find. I have the standard meat loaf, spaghetti, lasagna ones. I'm looking for DIFFERENT ones. I can't find any in my cook book.

The stipulation is that it not include cheese, since my kids won't eat it. Any suggestions?

I do not have the recipes handy, but Joy of Cooking, Betty Crocker and Rachel Rae do, and I've made so often I don't use anymore. If too pedestrian, my apologoies (but you did say "kids").

Chinese-like: Make little meatballs (1/2"). Bake 15-20 mins at 350. Throw into an Asian sauce (evelope mix, sweat/sour). Throw in broccoli florets, water chestnuts serve over rice. Kids'll eat it. Some like the dry fried noodles with it.

Tamale pie (Joy of Cooking) which is not necessarily spicey, is a casserole with a cornbread topping. Satisfies the Taco Bell urge.

Fake shepherd's pie: sauteed ground beef with some onion, add frozen mixed veg (one package). Put in a casserole dish. Cover with prepared or home made mashed potatoes. Bake till the potatoes or browned.

When I get home I will find the new turkey burgers that I have been making that have sage in them and are served on a bun with cranberry sauce mixed with lite mayo...tastes like Thanksgiving on a bun. How about sloppy joes (made with either chopped chuck or ground turkey or chicken)- Taco bake??? Taco salad sans cheese?

If you want my spicy shepherd's pie recipe (with chipotle sweet potato topping), PL me. You can adjust the spiciness by using fewer chipotle peppers.

I make "meatloaf cupcakes" for our family - I'll look for the recipe (made with turkey) - my daughter LOOOVES the idea that it's called a cupcake - good serving size, etc... and it's actually a really good recipe...

Spare_o, that sounds great! Can you just post the recipe for all of us?

I make a Keema Curry with ground turkety (Indian) and it is easy, fast and tasty. When I get home I will get the recipe for it. Great as left overs too. All the flavors intensify.

Picadillo:

lb. turkey
1/2 cup each chopped onion and green pepper

2 cloves garlic, minced

1/2 cup tomato sauce

1/4 cup each sliced Spanish manzanilla olives and raisins

2 Tbsp. capers (optional)

1 tsp. ground cumin




PLACE meat, onions, peppers and garlic in large skillet; cook and stir on medium-high heat 5 minutes or until meat is browned and vegetables are tender. Drain.

ADD tomato sauce, olives, raisins, capers and cumin; mix well. Reduce heat to low; simmer 15 minutes, stirring occasionally.

SERVE over white rice.

My favorite for a quick sloppy joe back in the day when my husband was in grad school (and we were broke) and the kids were little:

ground turkey & onions, browned
add mustard, bbq sauce and crushed red pepper (and other spices, like cumin) if you like.

serve on a roll with or without cheese

yum!

Thanks for your help! And spare_o, that web site had lots of chicken recipes, too. WAY cool, since it seems we eat mostly poultry and ground poultry.
