Last summer i was home on maternity leave, and i had the opportunity to have many lunches at Celebrated Food. I became addicted to one of their special salads, which i think they called a Southwestern Caesar or something along those lines. Its exact incarnation changed daily, but i think it usually included lettuce, avocado, tomato, maybe black beans, onion, and perhaps even corn. Or maybe i'm making some of that up. I know nothing about the dressing - that might've changed from day to day as well, but i remember hearing the word lime in the description once.

Does anyone remember this salad? I'd like to reconstruct it now that it's getting warmer out. What are the chances of finding out what was in the dressing? I heard that Dasti's is offering Celebrated's salads, but i doubt that's one of them, and i get the sense that they're not the same anyway.

i miss their crazy salad....a fruit, a cheese, and a nut. my favorite was smoked gouda, toasted walnuts and pears.

papayagirl, I have a great recipe for a corn and black bean salad that has fresh lime juice in the dressing. If you put it over some salad greens, you'd probably re-create what you had at CF. One important note about the recipe - it calls for fresh raw corn. If the corn is sweet and fresh, it's awesome. If you had to substitute, I would only go with frozen corn kernels, not canned, but the fresh raw corn is what makes the salad for me. Here's the recipe:

Black Bean and Corn Salad

Dressing

1/2 cup fresh squeezed lime juice (about 2 limes)
1/2 cup extra virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/8 teaspoon cayenne pepper

Whisk or shake ingredients together until well blended. Adjust seasonings to taste.

Salad

2 15-oz. cans black beans, rinsed and drained
4 ears fresh raw corn kernels (slice them off the cob using a sharp knife)
1 orange, yellow or red bell pepper, seeded and chopped
2 tomatoes, chopped
3-4 scallions, thinly sliced
1 avocado, peeled, pitted and diced (optional)
1/4 - 1/2 cup chopped fresh cilantro, to taste

Combine all the ingredients in a large bowl, pour dressing over and stir. This salad can be made a day ahead, allowing the flavors to blend. Stir the dressing through before serving.


mickey, I have another salad recipe that I got from a friend which is similar to the crazy salad concept. You may need to play around with the proportions of the salad ingredients. Here's the recipe:


Blue Cheese Pear Salad

For the Salad:
10 cups torn salad greens (use a mixture of greens, including arugula, for extra flavor and color)
3 large ripe pears, peeled and cut into cubes
4 ounces crumbled blue cheese (try the Rosenborg extra creamy)
1/4 cup slivered almonds, toasted

For the Vinaigrette:
1/3 cup walnut oil
3 tablespoons raspberry vinegar
1 1/2 teaspoons Dijon mustard
Pepper to taste


In a large bowl, combine the salad greens, pears, cheese and almonds.
In a jar with a tight-fitting lid, combine the vinaigrette ingredients; shake well. Pour over salad; toss to coat. Serve immediately.

I went to Dasti's on Saturday night for dinner and the Celebrated Salad was on the specials menu.

I make my own crazy salad all the time - just tonight, in fact...lots of times I just use goat cheese, but you're right Mickey - the smoked gouda was great - will have to do that soon.

I liked the Yeats aspect of it -- "It's certain that fine women eat / A crazy salad with their meat" -- even if it was pretty much the same mango cashew thing each time I was there. But I miss Celebrated, which featured the best restaurant room in town even if the food lagged behind Ver Jus.
