Fresh, fabulous mozzarella from Hoboken Farm Boy, the BEST tomato I have had all summer, olive oil, salt, pepper, and a little more salt. It doesn't get much better than that. |

Silly me. Hoboken Farm Boy is (or was?) a natural foods store in Hoboken. Hoboken Farms makes the mozzarella. Got a little confused, as old people sometimes do. Basil would be yummy, but I didn't think to buy any and I'm going "simple" today. Diedra, you are welcome to the half pound of mozzarella I didn't eat and one of the other tomatoes, but I think my hubby might be upset if I gave it away to a total stranger. Hope your day gets better, what's left of it anyway.

That was the staple dinner during the hot summer months: Mozz from the farmer's market, tomatoes and basil from the garden on real brick oven bread from Altamura's in Bayonne(It is great bread and I work 2 blocks away). Just picked a bunch of basil and made a nice batch of pesto for the freezer. Also made a cilantro pesto from the huge bunch bought at the farmer's market last week...dinner tonight! MMM! |

Thanks Me, I can live vicariously (sp?) through your enjoyment until I venture out and get some for me-self!...AND a bottle of vino! I love mozz with roasted peppers too! That's my FAVORITE sandwich! BTW, my day got considerably better when my husband went out and did complete grocery shopping this evening!...AND put them ALL away! Yay! |

Deidra, what a wonderful man! I was thinking about some vino myself, but I kind of overdid it in that department over the weekend, so I was a little gun shy. Plus, I have the whole rest of the week to get through! blackcat, MMMMMMM, cilantro pesto! Tell me more (I love cilantro too). |

Pine nuts, garlic, and cilantro. Process in food processor and drizzle in olive oil as its going. Salt and pepper to taste. You can get creative and add jalapenos. Last night we sauted some veggies and stirred in some of the pesto at the end. I keep it in the freezer and spoon out what I need. Comes in handy when you really need fresh cilantro but don't want to go to the store. Sorry there are no measurements. I cook that way. Just follow the measurements for basil pesto |

Nothing like a fresh tomato from the garden, with good bacon, a touch of mayo and salt and pepper on multi grain bread. It was my summer obsession. |

Thanks blackcat. So, it's just like basil pesto. Thought there might have been a different ingredient or two. Boomie, BLT is another favorite. This thread is making me hungry! |

cat, I'd toast the pine nuts first. Put them in a heavy skillet or pan and into a very hot oven (500 degrees, say) for 2 or 3 minutes, shaking them after a minute or so. When they are uniformly lightly browned, take em out and add them to the recipe you described. |
