we're thinking of trying our hand at cooking a goose for xmas dinner this year. any suggestions on where we can purchase one?

There were geese at the Millburn Shop Rite for Thanksgiving. I have to say though, the stock there is unreliable so I wouldn't necessarily count on it for the next round of holidays. They have capon, too!

Order one in advance. I bought mine at Kings in Maplewood 2 years in a row. Tasty. You probably know this already, but geese aren't big enough to serve a lot of people. Plus, they are fatty birds, so if you have more than 6 or more good eaters, you might need 2.

We did a goose last year - it came from the big Kings. I stuffed it with dried apricots, prunes and apples to give the meat a fruity flavor

I've seen them at regular markets with some frequency but Lutz's Pork Store might be more reliable. Slit the skin to let out the ample fat but collect the fat in the roasting pan for other purposes. There's an authoritative recipe in Cook's I can scan and email to you.
