Help! A family member was diagnosed this morning as being diabetic; does anyone have recipes for Passover that are more appropriate for some one with diabetes?

The best advice is to keep it simple and try low fat alternatives to some of the old standbys. You can now get low fat gefilte fish in the supermarket, there are kosher for passover yolkless noodles available, try a sweet potato pie rather than a kugel, consider carrot tzimmes to be a starch rather than a vegetable since it is very high in sugar, serve turkey rather than brisket, steam the vegetables and don't serve them in a heavy sauce, try fruit for desert rather than made for passover cakes and cookies, regular matzos are the ideal starch exchange for the diabetic since they are mostly just flour and water, etc. Allow the diabetic family member to have decaffeinated diet soda at the sedar table rather than wine or grape juice. Also remember that a balanced meal and strict portion control are a very important part of the diabetic diet regardless of the occassion.

There are many diabetic cookbooks out there which are especially helpful at holiday time. The American Diabetes Association and Publishers Clearing House have both proven to be excellent sources for such publications. The only problem I have found with these books is that many of the recipes are not strictly kosher but most can be easily adopted to conform with the dietary laws.
