Have them FedExed up from Texas. It's the only way. My preference is the Salt Lick (where I held our rehearsal dinner 10 years ago) but I've also shipped them in from the County Line. Both have wab sites. Dry ice is an amazing thing.... |

Reasonably authentic BBQ can be done at home with a gas grill. (I spent three years in Atlanta, and it's comparable to anything I found in the South). Stolen from the NYT Dining section: Soak some mesquite or hickory chips in water overnight. Coat the ribs or loin with the following rub: 1 part each of kosher salt, sugar, black pepper, paprika, and 1/2 part cayenne pepper. Set your grill to "low" and remove the lower rack. Loosely wrap the wood chips in aluminum foil and place them directly on the burner. Place the meat on the upper rack on the opposite side of the burner. The wood will start to smoke in a few minutes; replace the chips every 20 to 30 minutes. Cook the meat 1 hour/lb. for a loin, 45 minutes/lb. for ribs. When finished, cover a loin with aluminum foil for 10 minutes before shredding; ribs can be served immediately. The smoke and not the heat cooks the meat, and gives it the pinkish "smoke ring" found in real BBQ. |

Thanks, everyone. A friend also saw my posting and passed along the name of a local guy who does, according to her, delicious smoked everything. Marshall's Ribs, 917-860-8998. I'll let you know how they taste. |

You don't have to go any farther than Church's Chicken on Springfield Ave, headed toward the Home Depot on the same side of the street. Try it with the coleslaw and the sweet potato pie. The fried chicken too, if you really want to get that cholesterol count up. |

Finally. I had an opportunity to taste Marshall's smoked chicken and it's the most delicious. I want more! He's also created some kind of sauce that is finger-licken, bowl-licken good. Did I say I want more? At the risk of making him more popular than I want him to be, his number is 917-860-8998 -- and he's in Maplewood. |

Another vote for Church's on Springfield -- we ordered 5 racks of ribs & 36 pieces of fried chicken from them for a big family party this weekend, and they were an absolute hit! Huge racks of ribs, meaty, moist, tender, tasty . . . I'm drooling just thinking about it. Give them a try!!!!! |

I just heard that Marshall will be selling his ribs at the concert in Memorial Park this Sunday evening. His ribs are incredible--real Southern Style dry-rub--and this is a great chance to try some. Although, personally, I like his smoked salmon filet the best. |

Marshall delivers! Call him up, place an order for a certain day and he'll have it there for you. Marshall is my neighbor. The other night I came home from work and he handed me a sample of his smoked salmon fillet. When I sat down later to try it I had to walk outside and find him. I can't describe how good it was. I've had Marshall's ribs for the past few years. He really has a talent for smoked BBQ and he really enjoys what he's doing. His ribs are great. He has so many sauces that he makes as well. My mouth is watering just thinking about them as I write this. I wish him the best with this, he deserves it. Keep it going Marshall, slow and low. Darren Sager |

Another convert here--we tried Marshall's smoked BBQ chickens for a lunch party and they were sensational. Sign me up for the salmon next time. Marshall is a godsend for those of us who would rather relax in the shade with a brew instead of firing up the BBQ on a hot summer afternoon! |

was looking forward to Marshall smoked ribs being outside the train station tonight(sun) like last week. What happened?The ribs are great and the price was right. Have also tasted his country ribs and they are out of this world. |

Last I knew, there is a Famous Dave's on Rt 22 in Mountainside. I've never been there and don't plan to go, since I don't eat that sort of food, but I hear it's a very good (small) chain from other parts of the country. Tom Reingold

I was just toying with the idea of serving Marshall's smoked chicken for brunch at 10 am. I know I'd love to eat it again but I'm wondering if my guests (out-of-town family) will think it's too wierd for breakfast. Is it too wierd? If they think it's too wierd will they not eat it so I get to eat their share, too? Will they call my mother and complain that I'm a lousy hostess serving smoked chicken for breakfast then scarfing it all up for myself and licking my fingers while I pour the coffee? Do I care? Now where did I put Marshall's number? Oh, there it is. |
