Hello.

I would appreciate your suggestions on how to locate modestly sized commercial kitchen space to rent in order to produce smoked salmon. My process does not use the usual smoke-billowing equipment.

Try to find local caterers, restaurants, schools w/ underused kitchen space where you could barter--in a school you might teach your process in exchange for space--in restaurants or for catering you could trade some product.

Hot smoked or cold?--I'd buy either if you sell me on it!
