Mustt_mustt has very kindly offered to conduct an Indian Cooking Class, and Chris Farrow has offered Cent'Anni's kitchen. The date is July 11th, no time set yet.

Tom Reingold will also be holding a challah bread baking session during that time.

Chris has suggested a small fee to cover ingredients, but no one has committed to shopping.

So far, we have confirmed interest from:

I would absolutely love to attend as long as it's during the day!! I love to cook, and I love Indian food, but have been too scared to merge the two myself.

I have been conspicuously absent from this (and the end of the previous thread) because as the class started coming together I realized that I have a Continuing Education Class for 5 more weeks that is on Monday nights. I am saddened that I can't make it. I'm really hoping this is a successful evening though so that we will do it again in the future. Unfortunately for me the first Monday I am available is 7/25. Maybe I will see you guys then?

It better be at night. I have a day job.

By the way, it takes about three to three and a half hours to bake bread, though it's only about a half hour of labor. So we should have a large block of time.

My thoughts were that this would be an evening occasion - could be early evening, as early as people want to start (6.30 ish?). As far as logistics go, the layout of the kitchen would allow maybe 20 people to be in there to observe what is going on. In terms of the dishes being created, my thoughts are around possibly one meat (chicken?) dish and a couple of vegetarian dishes - that's my standard indian meal but I'm open to suggestions. I will be happy to share my thoughts on cooking a chicken dish, along with actually cooking it, and I understand mustt will be cooking - any other cooks aside from Tom the challah man? The range set up would allow for two/ three people to work at any given time. I would also suggest a nominal contribution to cover cost of ingredients etc - if we can agree on a menu we can put the list of required ingredients together and cost it out

I will think of a South Indian chicken dish in the next day or two. As for one veg dishes, my spouse will help with me with "rasam" which is like a spicy soup and is usually eaten with rice. Shall get back to you on the other veg dish soon.

Chris - we can get the spices but need to figure out the amount of chicken and vegetables, given the the number of people.

Oh, this sounds so good...Sorry, I haven't posted in a while. Been really busy teaching a summer course.

And I can't make on July 11---what a bummer!! I'll be in Arizona with hubby for a mini-vacation. As someone else mentioned, hope this is a success and that we can do it again! I have to learn how to make the challah from Tom....

Mustt Mustt - do you have a recipe for fried okra? I had the most delicious fried okra in Bangalore -tiny little matchsticks dredged in flour and spice and deep fried. Absolutely delicious (and not slimy like southern US okra). I had lunch a Devi in the city last week and they had a similar dish.
I'm also looking for a recipe for Dal Makhani.

I'm hoping I can make it on July 11 but won't know for a few days.

I'm in for coming--would you mind if I think about doing the saag paneer? (It's very labor intensive) I'm so caught up in the IB program work (see education thread) that life has gotten very hectic. But at best, I will show or explain the simplicity of making paneer!!

Eliz--there's a wonderful Bangalore-style restaurant in Edison on Oak Tree Road--it's not in the main area, but if you turn left on Oak Tree, it's in the first big shopping mall. They do the fried okra dish.

My daughter gave me a suggestion, and I'd like to run it by you folks. Since it takes hours to bake a loaf of bread, she suggested bringing the ingredients in various stages, similar to the way they present cooking on cooking shows. So I'd bring a loaf finished with the first rise and whip it out when we're done with our kneeding the ingredients of another loaf.

What do you think? Of course, it's a lot of work for me, and it also means you might not walk home with your own loaf of bread under your arm.

Chris, count us in. That's 2 adults and our son, who turns 6 on that very day. I might even bring a birthday cake! I eat most anything, my husband doesn't eat any "mammal meat", as he puts it, and my son doesn't eat much at all, though if there is challah already prepared, he'll definitely eat that, and we'll probably feed him ahead of time anyway. Looking forward to a fun evening.

I'll be there. I have to figure out how to prepare a few balls of dough and have them at the right temperature and the right stage of rising in time. If you have any tips, I'd appreciate them.
